Gestation period???
The average for a horse is from 340 to 342 days for a dog its 63 days--- the effects of a bad choice (or good choice for that fact) are not as easily corrected in horses as in dogs--- Dogs have a longer breeding life and more at twice a year.
Birds are the easiest to change, dogs come in second in the animal world, with in a few generation you could have a totally different type and breed if you choose to, horses are much different to change.

To some degree all selective breeding is relevant. But I see what your getting at.
